I love cabbage. Love it.
I never used to, I used to hate it. My past experiences were of the soggy overcooked version dutifully plopped onto your plate as part of a ‘balanced diet’.
Nutritional value exists in the cleanest, raw-er form of our foods. Foods grown in the sunshine amongst healthy nutritional soil thrives, has the strength to see off insect attack (yes there were some slugs and caterpillars here) and offers you the RICHEST form of live giving vitality it can. Nature provides.
Cabbage is rich in potassium (nerves, muscles and bone strength), manganese (brain and nervous system health, enzyme production), iron (blood and immune system health) and magnesium (nerves, muscle and immune system function). A great anti-inflammatory, anti-oxidant, high in Vitamin A, B, K, and B vitamins. We need to keep eating B vitamins as the body doesn’t store them in the body.
Try shredding into salads raw amongst other green goodies like kale, lettuce, rocket or making gut friendly sauerkraut. Your body will love you for it.
